Somehow, Sunday evening is already upon me, and if I don't figure out supper soon, we will have a PROBLEM. And I'm trying to avoid problems this week (and always)!
So here's the plan:
Chunky Tomato soup - pretty easy - start with diced onion, garlic, red peppers and tomatoes. Cook in olive oil over med heat till the onions are soft. Add tomato paste or crushed tomatoes (500 g or more), 1/2 c. red lentils, and water or vegetable stock. season to taste with salt, pepper, basil, or whatever your favorite herbs are. (got plenty of tomatoes at 1.50NIS/kg so this out to be just right!)
Mashed potatoes (potatoes were 1.50NIS/kg last week)
Cottage Cheese pancakes
Carrot sticks, Cucumber sticks and some sort of dip for them (we'll have to see what I manage to pull together!)
