Super Easy, Frugal Corn Bread

Tonight for dinner I served corn bread, roasted carrots, omelets, and potatoes. Very boring. Very cheap. The carrots and potatoes were purchased for 1.89 NIS/kg, but I heard rumors you can get those this week at Victory (no where near me) for WAY less than that. Eggs are pretty cheap, although since these were organic, not as cheap as some. And the corn bread - well I think I have the simplest recipe ever!

Here's what you do to make two of those pans that are slightly smaller than lasagna pans - they say 31.6 cm X 21.6 cm on the package

Preheat oven to 175 C (350 F)

3 c. cornmeal
3 c. whole wheat flour
1/2 tsp salt
2.5 tsp baking powder
3/4 c. raw sugar

Mix together in a large bowl, then make a well in the center of the bowl and add:

1/2 c. oil
1.5 c. milk or your favorite non-dairy milk
2 c. water
2 tsp vanilla extract

Mix it all together really well, making sure you get rid of all the lumps!

Pour into 2 pans (as described above) and bake for 30-40 min, till done (test with a toothpick).
