Cinnamon-Maple-Oatmeal Breakfast Bread

I got a whole bunch of requests for the recipe for my not so sweet, but sweet enough breakfast bread.  Here goes:

(I make this vegan. More on my analysis of baking with eggs vs. baking with flaxseed another time.)

4-6 T. ground flaxseed
1 cup whole oats
2.5 cups boiling water
Mix these 3 ingredients together and allow to sit for 10 min.
1 tsp. vanilla
1/4 c. maple syrup
1/4 c. oil
Mix well.
3 cups whole wheat flour
1/2 cup oat bran
1.5 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. salt
Mix Well.

The next part is optional, but does add something!

mix together 1 tsp oil, 1/4 c. sugar, 1 tsp. cinnamon, 2 T. ground flaxseed, 2 T. oat bran

This makes two loaf pans. I pour 1/4 of the batter into each loaf pan, sprinkle half the cinn-oatbran-flaxseed mixture on top, then fill the loaf pans with remaining batter, and sprinkle the other half on top. Bake for 1 hour in the center of your oven at 350 F (175 C). Test for doneness...And Enjoy!


  1. On Obesityhelp site there is a healthy version in single portion (large mug for microwave) recipe.
    I believe it is: 1egg,1C flaxseed,Splenda,mashed banana, cinnamon and baking powder-zap for a minute in large mug set to cool and plop it out.
    I fiddled around and use a medium plastic bowl (I hate glassware as u sn a clutch-to each their own!).
    I use : 3 eggs, I plain yogurt ,I C oats, 1C flaxseed, baking powder, cinnamon and ginger mixture. For sweetener I add applesauce or mashed banana. Optional for me are ground nuts, dried blueberries or dried cranberries or chocolate chips.
    I zap for five minutes and invert over a plate after removing from microwave - I wIt about ten minutes for it to pop out and cut into quarters. I cut each quarter as I need into slices and toast in my microwave. This amount is four-six servings for me. I smear cheese or PB on it if desired-or not.

  2. Thanks Mikimi! So glad you enjoy yours! (I don't use a microwave, had too many issues with it the last time I owned one). Just a word about plastics in the microwave: caution!

    (And here I thought my version was healthy!)

  3. I'm trying this one right now (for Shabbat morning.)
    I've halved the recipe and added dried cranberries and made them into muffins. And I didn't have patience to do the topping your way, so I just sprinkled them with cinnamon sugar before I put them in the oven.
    I'll let you know next week how they come out :-)

    1. I have made one with cranberries, but it is a waste around here. I love them but my kids just pick them out and complain. So I've gone plain and boring. One day they will let me be creative again, I hope! (Just have to work on those texture issues I guess)
