Pretty Salad!



Pretty Salad! 


I made this bright salad to go with our supper tonight.
We had gotten a whole bunch of really well priced, amazing mangoes this week, and they were calling my name!

All I did was slice cucumbers, red peppers, and mango and toss in a pretty bowl.
I'm offering sunflower seeds as a garnish, as well as balsamic vinegar and olive oil dressing.

And that is it, because it's the height of the season and fresh fruits and vegetables taste pretty amazing right now.

Just wondering if my kids will eat this though! Anyone want to guess how many will agree to eat it?

Oops... I meant to post yesterday's menu yesterday!
Well, better late than never!
Here was supper -


Rice (brown rice)

Sweet and Sour Black Bean Non-Meat Balls (they fell apart in the sauce but were really yummy, I will post a recipe as soon as I can figure out how to get them to hold their shape a bit. Basically it was black beans pureed with onion and garlic (sauteed till carmelized), ground flax seed, oat bran, salt and pepper...) The thing about making these is I really need to know the night before, in order to soak the black beans

Cucumbers

Some people supplemented with the leftover homemade whole wheat pitot and chumus (homemade and soo yummy!) from lunch!

Tuesday Night, March 15, 2011

Sorry for not posting for a couple of days. Life got in the way. My computer has been turned into the telephone - it's they way we communicate with friends and family overseas - webcam and magicjack - and it's hard to find time to just write. It's been especially busy the last couple of days...

In addition, I have been feeling seriously burned out. Not just cooking burnout, just plain burnout. Sometimes life gets like that. Trying to figure out ways to recharge without actually abandoning my children...

Anyhow, here's the supper plan for tonight:

Pitot with vegetarian taco filling
Cucumbers
Potato Bourekas (working on the freezer cleanout)
Artichokes (that's what happens when my younger 3 children accompany me to the store. they see artichokes and start dancing. isn't that nuts? not exactly frugal but they were a lot less expensive than last time I saw them - only 8NIS/kilo - so I bought them. at least they weren't begging for candy!)

A bit of a hodge-podge menu, I admit, but everyone ate happily, which was the goal. When my hubby gets back from his trip, I'll have to re-start the "organized" menus...

Monday Night, Feb. 7, 2011

I ended up going out shopping on Sunday afternoon, only to be very disappointed with what I found. I went to Kimat Chinam, where for the past few weeks I have found amazing produce deals, and for the past few months in general  has had very good produce pricing... only to discover that they raised all their produce prices (cucumbers for over 5 NIS/kilo, for example)! So, I left and went to Mega, since I noticed an ad the other day about some low produce prices.

At Mega I found a bunch of produce, so I bought according to the sales. Once again, we have lots of cauliflower. I'll have to get creative with cauliflower! (I also found tomatoes, cucumbers, carrots, and red peppers for decent prices)

Let me know if you are finding stores with good produce sales! (The shuk here in Teverya isn't really less expensive than the supermarkets, only perhaps right before closing, but that timing doesn't work out for me right now...)

Tonight's menu is a bit different. We like to mix things up every once in a while....

Breakfast for Supper!

Omelets
Cut Veggies - carrots, peppers, cucumbers, tomatoes -  with avocado dip
Hash Browns
Carrot muffins
Citrus fruit salad


Some notes about these dishes:

My kids think omelets are so much cooler than scrambled eggs, so we'll go with omelets.


I have tons of avocados left from when I bought them at Yesh for 1.99NIS/kilo a week and a half ago. They are all ripe now. So, avocado dip is in order. I'm going to try to freeze some, as rumor has it that does work. What do you think?

Hash Browns allow me to pretend that I really am a southerner. I like to think I have southern roots, even though they're not very deep... I like potatoes in most any form, in any case, so I will introduce my kids to the idea of hash browns tonight!


Citrus Fruit salad - I have been buying all those citrus fruits that are in season right now. We have white grapefruit, pink grapefruit, pomelit, naval oranges, and clementines right now (yes, we also have lemons, but I'll leave them out of the salad!).  My 6 yr old really wants honey-cinnamon oranges, so I'll indulge her and make them again.
