Monday Night, May 17, 2011

So, what's this Healthy Eema going to do? I'd been buying whole wheat pasta at Yesh for about 4.50 NIS per package, and it's a lot more expensive in other places. But now it seems Yesh isn't carrying whole wheat pasta anymore! And I don't think my family will just give up their macaroni and cheese addiction, and I am not switching back to white pasta. So - please, dear readers, if you are in Israel, please tell me which supermarket chain carries whole wheat pasta for under 5 NIS per package (500 g package, that is)!

In the meantime, we have to have a pasta-free menu...

So, Monday night's menu will be:

Vegetable soup (leftover from last night)

Lentils - prepared very simply so reflux girl will eat something

Artichokes - I think I've mentioned how psyched my younger children are about artichokes, and I found them for 4 NIS/kilo today...

Eggplant baked with a creamy-smoked cheese sauce

Tomatoes with basil and olive oil

And something else that the kids will eat instead of eggplant (usually it would be macaroni and cheese) but I don't know what that will be... wish me luck and creativity!

Shabbat Menu, Parashat Kedoshim, April 29-30, 2011

What a week!
We started out with Pesach, put that away, got back to regular life, made too many visits to the doctor, went grocery shopping, because even though we plan to move, we haven't found a house to live in yet, and still need to eat frugally.
Discovered a savings strategy I had been missing out on: Kimat Chinam offers 2% off your purchases of 300 NIS or more (not so hard to get there, unfortunately!), if you pay in cash and are a VIP card holder. This makes it well worth the 10 NIS for the card!

So here's my Shabbat plan:

(No, I am not baking shlissel challah. I can't wrap my head around bread baking. I have been fighting viruses, asthma, and allergies...)

BUY Challot
Vegetable soup (The kind I simmer for half the day) - perhaps even with kneidlach for those family members who now love them!
Mushroom-Barley Stew for lunch, considering the unseasonable weather (weird, it's supposed to be close to summer here overlooking the Kinneret, but it's raining. And they say there is more rain coming tomorrow night...)
Chicken (I froze our leftover chicken for chag, so now that will be my major timesaver this Friday) - I have shnitzel and some chicken roasted in sweet and spicy sauce (honey, crushed black pepper, garlic powder, and parsley flakes, slathered all over the chicken and roasted slowly in my oven. Yumm)
Artichokes
Roasted Zucchini (oven roasted diced zucchini, with olive oil, salt and pepper)
Potato Kugel
Broccoli Kugel (chopped broccoli - run it through the food processor for a minute or two, 2 eggs, 2 T. flour, 1 cup water, 1/4 c. mayonnaise, salt, pepper, and other spices to taste. Bake at 375 F for about 1 hr, till golden brown. You could probably make this eggless by using ground flaxseed soaked in 1/2 c. water and using a vegan mayo.)
Fruit Salad (sorry kids, no chocolate cake or cookies this week. I'm beat. And I want to lose those Pesach pounds...) - Actually maybe just watermelon and regular Israeli melon. Both were pretty well priced at Kimat Hinam...

Oh, question: are those starfruits going to come down in price? They are 14.99 NIS/kilo right now. My kids love starfruit, especially when it's locally grown. Any help is appreciated. Or, if you have a starfruit tree bearing fruit here in the Northern part of the country, we'd love to take some off your hands! We'd love to get the opportunity to harvest it and take trumot and maasrot...

Thursday Night, Post-Taanit Ester

Looks like I have a feast to prepare. Several of them!

I wonder if I can double-up some of the preparation, and serve some things more than once.

Here's how we'll be breaking the fast:

Vegetable Soup (my usual, saute onions, garlic, celery, carrots, and any other soup worthy vegetables. lower the flame and cook, covered, for 10 min. then add soup stock, spices, salt and pepper. simmer until you need to serve it. the longer it cooks, the more complex the flavor...)

Broccoli Quiche - if I run out of time, this will be a crustless quiche.

Baked Potatoes

Artichokes - love those dancing children! (see Tuesday's post if you're not sure what I mean!)


Salad - right now I have tomatoes, purple cabbage, cucumbers, and red peppers. perhaps i'll throw in a sliced carrot, too.

Tuesday Night, March 15, 2011

Sorry for not posting for a couple of days. Life got in the way. My computer has been turned into the telephone - it's they way we communicate with friends and family overseas - webcam and magicjack - and it's hard to find time to just write. It's been especially busy the last couple of days...

In addition, I have been feeling seriously burned out. Not just cooking burnout, just plain burnout. Sometimes life gets like that. Trying to figure out ways to recharge without actually abandoning my children...

Anyhow, here's the supper plan for tonight:

Pitot with vegetarian taco filling
Cucumbers
Potato Bourekas (working on the freezer cleanout)
Artichokes (that's what happens when my younger 3 children accompany me to the store. they see artichokes and start dancing. isn't that nuts? not exactly frugal but they were a lot less expensive than last time I saw them - only 8NIS/kilo - so I bought them. at least they weren't begging for candy!)

A bit of a hodge-podge menu, I admit, but everyone ate happily, which was the goal. When my hubby gets back from his trip, I'll have to re-start the "organized" menus...
