Yesterday I got a message from someone on Whatsapp about tomatoes.
Yes, about tomatoes.
It seems that some farmers have too many tomatoes sitting in their fields, and now that the price has dropped, it's not worth their while to pay field hands to harvest the rest of the crop.
One farmer has announced that anyone who wants to come pick, can do so. Completely FREE. Just bring your own bags!
He says there are at least 30 tons waiting to be harvested. The farm is in the "arava" region. The harvest must be done between now and Purim (March 24th).

Please do NOT call on Shabbat.

Black Bean Salad
This is one of my new favorite salads. I love dishes that are simple, easy, dairy-free, and wheat free, soy-free, and nut-free so that we all can enjoy them together.
The inspiration for this dish was a salad I had years ago when we lived in Texas, and I decided to finally figure out my own dressing for it - for truly the dressing is what completes this salad!
For the salad:
2 cups black beans, already cooked and drained
2 cups frozen corn kernels, lightly steamed or roasted and cooled
2-4 red peppers, diced (you can use a mix of red/green peppers, too if you like)
4 tomatoes, cut into cubes
(the original dish had raw onions in it, but raw onions are a major source of food poisoning, so they scare me, and my picky family won't eat it anyway)
(You can totally adjust this and use more or less of something as you like - go ahead and make this "your own"! - it's great with acocado, or lettuce, or quinoa, or all, or whatever inspires you!)
For the dressing:
1/4 cup balsamic vinegar
juice of 1 orange or clementine (I had a clementine in the house)
1/4 cup olive oil
2 Tablespoons tomato paste
Chili pepper flakes (to taste)
Smoked paprika (to taste, I used about 2 tsp)
salt (to taste)
ground black pepper (to taste)
Place all the vegetables in a pretty salad bowl. Mix the dressing together in a jar, bowl, or container. Mix really well. Pour dressing over vegetables and gently toss it all together. Serve cold.
This salad can actually be a meal in and of itself, or is a great accompaniment to anything at all.

Chunky Tomato Soup with Rice
I had to make some of my son's favorite foods for his birthday supper.
He loves cheesy broccoli pie, so I made that. But it is so not frugal, since cheese AND broccoli are ridiculously expensive, so I won't share that recipe here.
He also loves chunky mashed potatoes, but I would hope everyone knows how to boil potatoes and mash them.
I also made a sweet potato, fig, craisin, and pistachio salad, but that was for me (yay for cheap sweet potatoes last week!)!
SO... I will share the chunky tomato soup recipe.
1 onion, diced
2 cloves garlic, crushed
olive oil
Sautee onion and garlic in olive oil in a nice, thick bottomed soup pot, till browning
Add:
4 tomatoes, chopped
Continue to cook, stirring frequently for about 10 min.
Add
500g tomato paste
6 cups water
salt, pepper, and ground allspice to taste.
Bring it to a boil, then add (already cooked) brown rice. (I cooked my rice pareve the other day, with a leftover remake in mind!)
Heat thoroughly.
Serve generous portions, my kids all really loved it.

Just taking a break from hunting down coupons to write up our supper menu!
It was super simple:
Whole wheat spaghetti (I buy this at Yesh, where it is 4.79NIS/500g bag. best price I have found)
Primavera sauce (my version - saute onion, pepper, mushrooms in olive oil. when onions are soft, add lots of diced tomatoes. cook till soft. add liquid if necessary and spice as desired. This time I added a 100g package of tomato paste to hurry the process along) - I got onions, peppers, and tomatoes cheap in the last couple weeks. The mushrooms were the end of my stash of frozen sliced mushrooms. Now I need to find a reasonable source for mushrooms... any ideas?
Shredded mozzarella cheese sprinkled on top - use this sparingly, as mozzarella cheese costs about 70 NIS/kg right now. We used about 15 NIS worth, for the 6 of us.
Carrot sticks - got carrots really cheap a couple of weeks ago
Avocado - got avocados really cheap a couple of weeks ago and they are slowly ripening. we've been sharing a couple among us every day. we all (well, almost all!) love avocado just the way it is.

Tomatoes, Tomatoes, and more Tomatoes!
I bought a lot of tomatoes. (GREAT prices on tomatoes right now - ranging from under half a shekel/kilo up to about 1.89 NIS/kilo!)
Here are some of the ways we've used them:
Fresh tomato and basil salad (add chick peas or mozzarella cheese. We love it both ways, but use chick peas most often because mozzarella cheese is far pricier)
Homemade tomato puree to use as a base for all of your tomato sauce variations
Roasted vegetables
Tomato, Lentil, and Black bean soup
Minestrone Soup
Fresh tomatoes on our sandwiches
Creamy Tomato Soup
