Wednesday night - July 7, 2011

We had a full day today, and I think I may have inadvertently gotten a little dehydrated. I got home, and just could not focus on throwing supper together. All I could think of was "I wish I could get takeout"... but then I snapped out of it, and remembered that I am trying to TRIM the budget, not spend extra!

So I quickly took stock of the food in the house, and here's what I came up with:

Rolls with butter

Creamy green vegetable soup (saute onions and garlic in olive oil. put any green vegetables you have in the pot, and add water to cover. I used green beans, peas, spinach, and kishuim - those special Israeli zucchini-like summer squash. Bring to a boil, then remove from flame and puree with an immersion blender. Add salt and pepper to taste, and add milk if you want. Gently reheat. This soup can also be served chilled, but it was so late I didn't have time to chill it!)

Ptitim with vegetables: saute onion, garlic, and whatever vegetables you need to use up - I used cabbage, carrots, tomatoes, and green peppers, preferably in a cast iron skillet. Add whole wheat ptitim, and toast in the skillet for a couple of minutes. Add liquid to cover - I used water and tomato juice. Stir and cover the skillet. cook over low and stir occasionally. add seasonings to taste.
