I didn't really make supper tonight - too busy! So I'll share my lunch menu instead!

Enjoy!

Toasted Cheese Sandwiches (I must admit, I bought expensive whole wheat bread, I couldn't muster up the energy to bake my own)

Red Lentil Soup with onions and red peppers (I actually took my leftover red lentil sloppy sams from the other day and made it into soup. It worked!)


Tomato Slices (got tomatoes cheap last week - bought unripe ones that are now ripe)

Honey cinnamon oranges (oranges from our tree, but they are cheap everywhere right now, so enjoy them!)

This was a busy day. We went on a hike! What a great experience, even though I am soo not into hiking!
Came home, and of course, the house was colder than it was outside, so we had to come up with a quick warming supper!

Here's our menu:


Vegetable soup (leftover from Friday night. I always make a double soup for Shabbat so we can have the leftovers early in the following week)

Toasted cheese sandwiches

Tomato slices with basil and olive oil (found tomatoes cheap last week!)

Purple cabbage (still had purple cabbage left from when it was cheap a couple of weeks ago. cabbage stays well in the fridge, uncut)

Red pepper slices (found red peppers cheap last week!)

Hot cocoa (major splurge. cocoa got SO expensive. Please tell me the cheapest place to buy cocoa!!)

We just kind of randomly pulled supper together tonight. It was just too hot to think and I am too stingy frugal to run the A/C, especially now that I can breathe again!

Here's what we pulled together:

Jelly sandwich on whole wheat bread for one picky child

Cereal and milk for another picky child

Whole wheat pasta spirals with tomato sauce

Make-Your-Own-Salad

It wasn't too creative and didn't require a lot of cooking. No one went hungry despite the lack of creativity...

My pantry is starting to look sort of bare. We are left with lots of lentils, rice, and barley, but none of my family members want me to make soups and stews! This will be interesting continuing with the pantry challenge. I just may have to cave and go to the supermarket this week, but I'll try not to. We plan to bake some muffins and corn bread tomorrow. We'll see what else we come up with...

Tuesday Night (Feb.15, 2011)

Tuesday is turning into a busy day for us! I have a feeling it will be one of those days when we get home at 6 p.m. from running around all day, famished.

I think it will be a crock pot day!


Here's what we'll be eating:

Tomato Soup -  Saute onion and garlic in olive oil. place in crock pot with crushed tomatoes, soup stock (I love keeping soup stock in my freezer - made from all the vegetable trimmings that otherwise would have gone to waste!), a few tablespoons of tomato paste, honey or other sweetener, ground black pepper, and bay leaves. Cook on low for 8 hrs. Don't forget to remove the bay leaves before serving, and puree if desired. I don't usually bother to puree this soup.

Toasted sandwiches - We have leftover pitot, so we'll fill them with tomatoes, peppers, avocados, olives, etc and sprinkle with cheese, and toast.

Fresh Veggies on the side - Whatever is still in the fridge! (I think we're down to carrots and cucumbers)

Apple Crisp - Diced apples sprinkled with cinnamon, covered with oats mixed with sugar and healthy oil, and baked till smells delicious. I'll assemble this in advance and put it in the oven as soon as we walk in the door.

Sunday Night

It's going to be a busy week, so I've begun my planning already now that the kids are in bed (ok, only the younger ones).
Tomorrow, we plan to be out and about all afternoon. And I still have plenty of those 1 and 2 NIS/kilo veggies, plus the Bulgarian Cheese that was on sale at Kim'at Chinam.

Here's the menu for Sunday evening:

Black Bean & Tomato Soup (crock pot)
Embellished Grilled Cheese Sandwiches
Salad - Lettuce, Tomato, Avocado, Bulgarian Cheese, and Olives(w/ a splash of olive oil)
Fruit for dessert (we have tons of oranges and pomelit right now)

A note about the soup: be sure to used pre-cooked black beans! (It's another one of those chop and toss recipes that I love: chop onions, garlic, celery, red pepper, a small potato, and 2 tomatoes. Place in crock pot with cooked black beans, tomato paste or crushed tomatoes, and 1 c. frozen corn. Cover with water or soup stock, season to taste. Let your crock pot cook it all day!)

Embellished grilled cheese means everyone gets to put their own "toasted" sandwich together. We usually offer a variety of cheeses, tomatoes, olives, and roasted peppers. But, of course, you can be as creative as you like!
