We just kind of randomly pulled supper together tonight. It was just too hot to think and I am too stingy frugal to run the A/C, especially now that I can breathe again!

Here's what we pulled together:

Jelly sandwich on whole wheat bread for one picky child

Cereal and milk for another picky child

Whole wheat pasta spirals with tomato sauce

Make-Your-Own-Salad

It wasn't too creative and didn't require a lot of cooking. No one went hungry despite the lack of creativity...

My pantry is starting to look sort of bare. We are left with lots of lentils, rice, and barley, but none of my family members want me to make soups and stews! This will be interesting continuing with the pantry challenge. I just may have to cave and go to the supermarket this week, but I'll try not to. We plan to bake some muffins and corn bread tomorrow. We'll see what else we come up with...

Minestrone Follow Up

Remember I said I was going to put some cabbage in the minestrone soup and hope the kids wouldn't notice it?

Well, to my surprise, everyone loved it! They said this minestrone soup was BETTER than my usual! The two middle children, who usually complain about minestrone not being their favorite soup, even asked for seconds!

That came from kids who rarely comment when they like the food I serve, but are VERY vocal about the food they don't like.

I'm quite pleased with the results!

Not Gourmet

I am a busy person. I used to cook all sorts of complicated recipes, and I really enjoyed the challenge. Now, though, I don't have time for that. And my kids like simple flavors better, so I rarely use recipes (sometimes recipe is a stretch, I improvise so much!) that have multiple stages, more than one bowl, or complicated instructions (that's why there won't be any recipes that require that you separate eggs and beat the whites). These menus are for people like me - people who have busy lives and, perhaps, picky kids.
