Quick menu write-up, as somehow it is time to eat and I haven't finished cooking! I was feeling a little uninspired to make supper, so here's what my last minute inspiration was:
Leftover tomato/rice/black bean soup (from last night)
Cheese pancakes - mixed up 2 eggs, a scoop of powdered milk, about 250 g "gevina levana" (a smooth, creamy cheesey product that reminds me of sour cream but is a cheese. You can use cottage cheese instead, if you can't get this product, I bought this today instead of cottage cheese, because it cost less), 1.5 c. flour, 1 tsp baking powder, salt, pepper, ground flaxseeds, sesame seeds, and milk till it's the right consistency, cook like regular pancakes!
Steamed peas
Fresh tomato slices
And we'll call it dinner!
