Corn muffins with molasses

Today I changed my corn muffin recipe - and the new version was really good!

Here it is:

2 c. whole wheat flour
2 c. corn meal
2 T. baking powder
1/2 tsp salt
1/2 c. molasses
1 tsp vanilla
1/2 c. sugar
1/3 c. oil
2 c. water + 1 T. vinegar

Mix well, with a spoon, and bake at 190 C (375 F) for about 25 min (makes 12 muffins)

  1. These sound delicious! I love the way you have combined the whole wheat flour and corn meal, and the molasses would give such a delicious depth of flavour!

    1. Thanks April! We love this new version. Just FYI if you try them, I noticed I wrote the wrong temp! So bake them at 190 Celsius not 190 Fahrenheit! (375 C)
      I corrected it above, too!

  2. These look delicious! I'm not sure I've ever made a muffin like this. I love the different ingredients though, so I know it would be a hit in my house. Thanks for sharing with Hearth and Soul!
