Improv Stew

I am so low on groceries, it's not funny. Last week we bought only the few things we *absolutely needed* to get thru the week, so this week I'm working my way through the remnants of that, and various other odds and ends that are stashed in my pantry, fridge, and freezer...

Here's my take on stew tonight:

1 onion, diced  (my last one! oy!)
1/2 head of cabbage, shredded
3 cloves garlic, chopped
1 yellowish green pepper, diced
saute the above in olive oil

cover pot and allow to cook for another few minutes

add:
p'titim - Israeli couscous in America - I had 1/2 a bag left
tomato paste and water, but I was out of tomato paste, so I added a 1 liter carton of tomato juice I bought on sale AGES ago and needed to use up. And more water, if needed...
spices, salt, and pepper to taste

Bring to a boil, then simmer, stirring occasionally, for at least 10 min. The p'titim cook pretty quickly. Serve when ready!

Enjoy!
